Crab Salad in Cucumber Nest
Ingredients
- Crabmeat, boiled and seasoned with salt (Lobster may be substituted), about 50g
- Harusame rice noodle, boiled and cooled in cold water
- Mango sliced into stalks - 4 stalks
- OriginO Long English Cucumber, peeled into strips about 10 cm long
- OriginO Gemini tomato sliced in half; 2 tomatoes
- Ohba – Japanese mint leaf ; sliced into ne strips
Procedures
- Place cucumber strips on a plate so that it creates a pouch
- Place mango stalks in the pouch
- Place harusame in the pouch, on top of mango
- Place crabmeat on top of harusame
- Garnish with sliced tomatoes
Dressing
- Rice vinegar - 2 parts
- Lemon juice - 2 parts
- Salt - pinch
- Honey – 2 parts
** Mix above well and add 1 part canola oil
** Pour the dressing on the salad and enjoy!
